Spicy Sujuk sausages beautifully arranged on a bed of onions, bell peppers, cherry tomatoes, potatoes, sprinkled with amazing Oriental Zaatar mix, baked to perfection, then finished with lemon juice and pomegranate molasses for a special tang. Super easy but packed with amazing bold flavors!
Preheat oven to 250°C for 5 Minutes . Brush a large oven pan with 1/2 tbsp of olive oil. Arrange onion, bell pepper, and potato slices until you cover the pan surface. Scatter thyme sprigs if using any, followed by lemon slices and cherry tomatoes.
Sprinkle the veggies with Zaatar, season with salt and pepper to taste, then drizzle with the rest of the olive oil (I used an Oriental Zaatar mix containing thyme, pistachio, fennel, cumin, aniseed, pumpkin seeds, sumac, sesame seeds). Arrange the sausages on top of the veggies, cut side down.
Transfer to the oven and bake for about 25 Minutes. Remove tray from the oven, finish with lemon juice and pomegranate molasses, then bake for 10 Minutes until the sauce thickens. Serve with lemon wedges and enjoy!
