Pistachio Kabab Arayes Board

Crispy pita loaves stuffed with the most delicious spicy pistachio Kabab, served with a tangy Biwaz salad, creamy Hummus, sweet cherry tomatoes, cucumber pickles, and lemon wedges for squeezing. For The Arayes
 500 g fatty coarse minced lamb
 3 garlic cloves, finely chopped
 100 g pistachio, finely chopped
 1 ½ tsp salt
 1 tsp black pepper
 1 ½ tsp ground cumin
 2 tsp chili flakes, or less if you prefer
 1 tbsp lemon zest
 5 small pitas or Lebanese bread loaves
 Olive oil for brushing
For The Board:
 1 red onion, thinly sliced
 ¼ cup chopped parsley
 Pinch of salt
 1 ½ tsp sumac
 1 cup Hummus
 1 cup cherry tomatoes, halved
 10 small cucumber pickles
 Lemon wedges

Preheat the oven to 200°C and place a large baking sheet inside to heat up for 20 minutes while you prepare the Kabab.

Place the lamb, garlic, and pistachio in a large bowl. Add the salt, pepper, cumin, chili flakes, and lemon zest. Using your hand, mix very well until combined.

Open the pitas from one side and spread the kabab mixture inside using a spoon. Close and slightly press the bread into the meat. Lightly brush both sides of the pitas with olive oil.

Bake the Arayes on the preheated sheet for 12 Minutes, turning once. You want the bread to brown and the lamb to cook through. You can also cook them in batches in a preheated pan on the stovetop.

Meanwhile, prepare the Biwaz salad: mix the sliced onion, parsley, salt, and sumac together.

Remove the Arayes from the oven, half them, then arrange them in the center of a board. Around them, spread some hummus, add the salad, cherry tomatoes, pickles, and lemon wedges.

The best way to enjoy them is to grab a piece with your hand, open it, squeeze a lemon wedge, add some Biwaz salad inside, close it, dip it in hummus, pick it up, and take a heavenly bite. Eat the tomatoes and pickles in between bites. Enjoy!
