You know when you see something and you expect it to have a certain taste? Well when you see those tarts, you expect to taste some sort of custard filling. But these beauties have honeyed melty Akkaoui cheese, flavored with cinnamon, orange zest, and a nice crunchy surprise, encased in buttery puff pastry! The strawberries sit beautifully on the cheese filling, then they are baked until the pastry is puffed up and golden. So good!
Preheat the oven to 200°C. Line a large baking sheet with parchment paper.
Transfer the grated cheese into the center of a kitchen cloth, bring the cloth together, and squeeze really tight to extract the extra water from the cheese. This step is essential to prevent the pastry from getting too soggy.
Transfer the cheese into a medium bowl. Add the pistachios, cinnamon, orange zest, and honey to the bowl. Mix very well, taste, and adjust the sweetness to your liking.
Place the pastry rectangles on the prepared baking sheet. Divide the honeyed cheese mixture between the pastry rectangles, leaving 1 cm border. Next arrange the strawberry slices over the cheese, pressing them slightly if they start slipping.
Fold the edges of the pastry inward to enclose. Gently press the edges of the tarts using a small fork to make them look pretty and to seal them. Generously brush the pastry with egg yolk.
Transfer to the oven and bake for 20-25 Minutes, or until the pastry is puffed up and the cheese is melted. Make sure to turn the broiler on during the last 5 minutes to give the cheese a nice golden color.
Let the tarts cool for 10 minutes before serving. Finish them with a drizzle of honey. The serving size is a tart as a dessert, or half a tart as a snack with coffee or tea. Enjoy!
