This is not your usual pizza. It's light, perfectly crunchy, full of flavor, and completely Lebanese! The sauce is made of fresh Zaatar leaves, garlic, chili flakes, extra virgin olive oil, then brushed on top of a homemade pizza dough, topped with mushrooms, goat Labneh, and baked until the kitchen smells like heaven. Preheat oven to 250°C. Spread the dough on a parchment paper and transfer it to a sheet pan. You can make the dough as thin as you like.
Pick the Zaatar leaves and place them in a small bowl. Set few leaves aside for garnish. Add the smashed garlic to the bowl, season with salt, pepper, chili flakes, then pour 2 tbsp of EVOO. Mix well.
Brush the dough with the oil mixture, making sure that the garlic and Zaatar are evenly distributed. Slice the mushrooms and scatter them over the dough.
Divide each Labneh ball into 3 pieces and place them all over the dough. Goat Labneh has a strong flavor so don't use too much here; you want to taste everything. Finish with more chili flakes if desired, and bake for 15 Minutes, or until the crust is golden. The baking time depends on how thick you rolled the dough.
Garnish with Zaatar leaves and toasted pine nuts. Drizzle with EVOO if desired. slice, and enjoy!
