This cake recipe is light, healthy, easy, and extremely delicious! It might look like any another cake from the outside until you slice it and see all the beautiful apple layers. Basically it's a lot of apples tossed in a cinnamony batter, stacked in a cake pan, topped with walnut for some crunch, then baked until the kitchen smells amazing and the apples are soft but still retain a little bite. I like to serve each slice with a spoonful of honeyed mascarpone. Check out the recipe!
Cut the apples in half then core them. Slice them into thin slices using a knife or a mandolin. You want them of the same thickness. Add the apple slices to a large bowl, toss them with lemon juice, and set aside.
Preheat the oven to 195°C and line the bottom of a 20 cm cake pan with parchment paper and brush its sides.
In a medium bowl, whisk together the flour, salt, baking powder, cinnamon, and nutmeg. Crack the eggs in, add the milk, honey, coconut oil, and vanilla. Mix very well until you get a smooth consistency.
Drizzle the batter on the apples and toss until they are well coated. Transfer the mixture to the prepared can pan and flatten using a spatula, making sure that the apple slices are stacked nicely.
Transfer to the preheated oven and bake for 50 Minutes. Let it cool completely in the pan before you remove it and serve it. If you slice it while warm, the cake will collapse.
