 30 g unsalted butter
250 g feta, crumbled into small pieces
 3-4 figs
 1 apple
 3 tbsp natural honey
 ½ tsp black pepper
 1 fresh baguette, cut lengthwise
 ¼ cup walnuts
½ cup baby chard (spinach and arugula work as well)
1

In a sauce pan, melt the butter and start browning it on low heat. When it turn golden brown and smells nutty, turn heat off and set aside to let it come to room temperature. Butter burns very quickly so keep an eye on it.

2

Pour the cooled browned butter on the feta, and start breaking feta using a whisk. Add a splash of water if the mixture is too thick. Taste and season if needed. Usually feta is pretty salty so you won’t need any. You should end up with a spreadable creamy mixture.

3

Cut each fig into 3 to pieces and the apple into thin wedges. Mix honey with black pepper and roughly chop the walnuts.

4

Build your tartines; spread the browned butter feta on the baguette, scatter fruit pieces, add baby chard leaves, sprinkle with crunchy walnuts. Finish with a generous drizzle of honey. With a serrated knife, cut the tartines into hand-holdable pieces, serve with extra pepper honey on the side and enjoy!
