Akkawi Cheese Peach And Apricot Mini Tarts

Flaky puff pastry, Akkawi cheese, crunchy pistachios, sweet peaches and apricots, all baked together to create the perfect mini tarts. Finish off each tart with honey, black pepper, flaky salt, and basil for an appetizer that’s perfect for everything from brunch, to lunch, to entertaining on a summer night.

 1 tbsp olive oil
 80 g Akkawi cheese, cut into bite size pieces
 12 mini puff pastries, thawed
 ¾ cup coarsely crushed pistachios
 1 peach, cut into wedges
 3 apricots, cut into wedges
 2 tbsp honey
 1 egg, beaten
 freshly ground black pepper
 flaky salt
 small basil leaves

Preheat oven to 180°C for 5 Minutes. Line a baking sheet with parchment paper.

In a non-stick pan, heat olive oil and start frying the Akkawi cheese pieces on both sides until they're golden. This should take about 5 Minutes. If they come out very oily, place them on a paper towel to absorb the excess fat.

Arrange puff pastries on the parchment paper. Sprinkle each pastry with about 1 teaspoon crushed pistachios, leaving a 1/2 cm border. Top with golden Akkawi and arrange the peaches slices on top of the cheese. Make 6 tarts with peach and 6 with apricot. Drizzle the fruit wedges with a little bit of honey then brush the pastry edges with beaten egg.

Transfer to the oven and bake for 30-35 Minutes minutes or until the pastry is puffed and golden. Finish each tart with more honey, black pepper, flaky salt, and basil. Serve and enjoy!
